Fish and Seafood Recipes - Bubbling Seafood Pasta

Ingredients                                         

  • 225 g/8 oz/2 cups conchiglie

  • 175 g/6 oz cod fillet, skinned and diced

  • 250 g/9 oz/1 small can mussels in brine, drained

  • 175 g/6 oz/1 1/2 cups peeled prawns (shrimp)

  • 15 ml/1 tbsp chopped dill (dill weed)

  • 10 ml/2 tsp corn flour (cornstarch)

  • 375 ml/1 1/2 cups single (light) cream

  • Salt and freshly ground black pepper

  • Grated rind and juice of 1 lime

  • 25 g/1 oz/2 tbsp butter

  • 50 g/2 oz/1 cup breadcrumbs


Method:

  1. Cook the pasta according to the packet directions. Drain.

  2. Meanwhile, cook the cod in a little water for about 5 minutes until just tender. Drain. Mix with the mussels and prawns.

  3. Add the dill and corn flour and toss to coat evenly. Stir in the cream, a little salt and pepper and the lime rind and juice.

  4. Stir in the pasta and turn into an ovenproof dish. Melt the butter and stir in the breadcrumbs.

  5. Sprinkle liberally over the dish and bake at 190°C/375°F/gas mark 5 for 25-30 minutes until golden and bubbling. Serve straight from the oven.
