Fish and Seafood Recipes - Canadian Vermicelli

Ingredients                                         

  • 175 g/6 oz/1 1/2 cups smoked salmon pieces, roughly chopped

  • 150 ml/2/3 cup olive oil

  • 2 garlic cloves, crushed

  • 15 ml/1 tbsp capers, chopped

  • 25 g/1/4 cup chopped dill (dill weed)

  • Salt and freshly ground black pepper

  • 25 g/1/4 cup freshly grated Parmesan cheese

  • 350 g/12 oz vermicelli

  • 60 ml/4 tbsp soured (dairy sour) cream

  • 1 small red onion, finely chopped


Method:

  1. Blend the smoked salmon, oil, garlic, capers, dill, a pinch of salt and a good grinding of pepper in a bowl. Add the cheese.

  2. Cook the vermicelli according to the packet directions. Drain and return to the pan.

  3. Add the salmon mixture and toss over a gentle heat for 2-3 minutes until piping hot. Season to taste.

  4. Pile on to warm serving plates and top each with a spoonful of soured cream and a little chopped onion.
