Cheesey Prawns on Rice
Ingredients

225 g/8 oz/2 cups
peeled prawns (shrimp)
-
298 g/10 1/2 oz/1 can
condensed mushroom soup
-
15 ml/1 tbsp tomato ketchup
(catsup)
-
50 g/2 oz/1 cup breadcrumbs
-
100 g/4 oz Cheddar
cheese, grated

225 g/8 oz/1 cup long-grain rice
-
225 g/8
oz broccoli, cut into tiny florets
-
50 g/2 oz/1/2 cup
toasted flaked almonds
Method:

Mix the prawns with the soup, ketchup, half the breadcrumbs and half the
cheese in u shallow ovenproof serving dish.

Sprinkle
with the remaining breadcrumbs and cheese. Bake at
200°C/400°F/gas mark 6 for 20-25 minutes until
golden and bubbling.

Meanwhile, cook the rice in
plenty of boiling salted water for 10 minutes. Add
the broccoli for the last 6 minutes of cooking.

Drain and mix in the almonds. Serve the rice mixture
topped with the prawns.
