Fish and Seafood Recipes - Cheesey Tuna Rice

Ingredients

  • 225 g/8 oz/1 cup long-grain rice

  • 185 g/6 1/2 oz/1 small can tuna, drained

  • 200 g/7 oz/1 small can sweet corn (corn), drained

  • 100 g/4 oz/1/2 cup cottage cheese

  • 30 ml/2 tbsp chopped parsley

  • Salt and freshly ground black pepper

  • 75 g/3 oz Cheddar cheese, grated

  • 2 tomatoes, sliced


Method:

  1. Cook the rice in plenty of boiling salted water until tender. Drain, rinse with boiling water and drain again.

  2. Return to the saucepan and add the tuna, sweet corn, cottage cheese and parsley. Stir well over a gentle heat and season with salt and pepper.

  3. Spoon into a flameproof dish. Cover with the Cheddar cheese and arrange the tomatoes around.

  4. Place under a hot grill (broiler) until the cheese melts and bubbles. Serve straight away.
