Fish and Seafood Recipes - Cod Ragout

Ingredients                 

  • 1 onion, chopped

  • 1 garlic clove, crushed

  • 15 ml/1 tbsp olive oil

  • 100 g/4 oz/2 cups button mushrooms, sliced

  • 400 g/14 oz/1 large can chopped tomatoes

  • 15 ml/1 tbsp tomato puree (paste)

  • 50 g/2 oz/1/2 cup frozen peas

  • 15 ml/1 tbsp chopped basil

  • Salt and freshly ground black pepper

  • 450 g/1lb cod fillet, skinned and cubed

  • 350 g/12 oz pappardelle

  • A few basil leaves

  • 50 g/2 oz Cheddar cheese, grated


Method:

  1. Fry (sauté) the onion and garlic in the oil for 2 minutes until softened but not browned.

  2. Add the remaining ingredients except the cod, pasta, basil for garnish and the cheese.

  3. Bring to the boil, reduce the heat and simmer for 10 minutes until pulpy. Add the fish and cook for a further 5 minutes, stirring gently occasionally until the fish is cooked.

  4. Meanwhile, cook the pappardelle according to the packet directions. Drain.

  5. Pile on to a warm serving dish, spoon the cod ragout over, garnish with basil leaves and serve with the cheese.
