Fish and Seafood Recipes - Country Cod Bake

Ingredients                 

  • 300 ml/1 1/4 cups fish or vegetable stock

  • 60 ml/4 tbsp tomato ketchup (catsup)

  • 30 ml/2 tbsp mayonnaise

  • 350 g/12 oz/3 cups frozen mixed country vegetables

  • Salt and freshly ground black pepper

  • 450 ml/1lb cod fillet, skinned and cubed

  • 2.5 ml/1/2 tsp dried mixed herbs

  • 350 g/12 oz fettuccine

  • 75 g/3 oz Cheddar cheese, grated


Method:

  1. Mix the stock, ketchup and mayonnaise together in a saucepan.

  2. Add the vegetables and a little seasoning, cover and simmer for 10 minutes or until tender. Add the fish and herbs and simmer for 5 minutes.

  3. Meanwhile, cook the pasta according to the packet directions. Drain and turn into a flameproof dish. Spoon the sauce over.

  4. Top with the cheese and place under a hot grill (broiler) until the cheese melts, bubbles and is turning golden.
