Country Cod Bake
Ingredients

300 ml/1 1/4 cups
fish or vegetable stock
-
60 ml/4 tbsp tomato
ketchup (catsup)
-
30 ml/2 tbsp
mayonnaise
-
350 g/12 oz/3 cups frozen mixed country
vegetables
-
Salt and freshly
ground black pepper
-
450 ml/1lb cod fillet,
skinned and cubed
-
2.5 ml/1/2 tsp dried
mixed herbs
-
350 g/12 oz fettuccine
-
75 g/3 oz Cheddar
cheese, grated
Method:

Mix the stock, ketchup and mayonnaise together in a
saucepan.

Add the vegetables and a little seasoning,
cover and simmer for 10 minutes or until tender. Add
the fish and herbs and simmer for 5 minutes.

Meanwhile, cook the pasta according to the packet
directions. Drain and turn into a flameproof dish.
Spoon the sauce over.

Top with the cheese and place
under a hot grill (broiler) until the cheese melts,
bubbles and is turning golden.
