Fish and Seafood Recipes - Crab Pilat

Ingredients

  • 25g/2 tbsp butter

  • 1 onion, chopped

  • 225g/1 cup long-grain rice

  • 600ml/2 1/2 cups fish stock

  • 100g/4 oz French (green) beans, cut into short lengths

  • 2  170g/2 x 6 oz/2 small cans crabmeat

  • 200g/1 small can pimientos, drained and chopped

  • salt and freshly ground black pepper

  • 2.5ml/1/2 tsp grated nutmeg

  • lemon wedges

  • chopped parsley


Method:

  1. Melt the butter in a flameproof casserole. Add the onion and fry for 3 minutes until softened and slightly browned.

  2. Add the rice and cook, stirring for 1 minute. Add the stock and beans, bring to the boil, cover, reduce the heat and simmer for 15 minutes.

  3. Stir in the crab with its juice, the pimientos, a little salt and pepper and the nutmeg.

  4. Re-cover and cook gently for a further 5 minutes or until the rice is tender and has absorbed all the liquid.

  5. Fluff up with a fork and garnish with lemon wedges and parsley.
