Fish and Seafood Recipes - Creamy Prawn Pasta

Ingredients                                         

  • 1 onion, finely chopped

  • 1 garlic clove, crushed

  • 25 g/1 oz/2 tbsp butter

  • 15 g/1/2 oz/2 tbsp plain flour

  • 150 ml/2/3 cup milk

  • 1 bay leaf

  • 300 ml/1 1/4 cups single (light) cream

  • 30 ml/2 tbsp chopped parsley

  • Grated rind and juice of 1/2 lemon

  • 5 ml/1 tsp anchovy essence (extract)

  • 350 g/12 oz/3 cups peeled prawns (shrimp)

  • 225 g/8 oz/2 cups lumachi


Method:

  1. Fry (sauté) the onion and garlic in the butter for 2 minutes. stirring. Blend in the flour and cook for 1 minute.

  2. Stir in the milk, bay leaf and cream. Bring to the boil and cook for 2 minutes, stirring.

  3. Add the parsley, lemon rind and juice, the anchovy essence and prawns and simmer gently for 10 minutes.

  4. Meanwhile, cook the pasta according to the packet directions. Drain. Add to the prawn sauce, discard the bay leaf and serve hot.
