Crispy Crab Fritters
Ingredients

100 g/4 oz/1 cup plain (all-purpose) flour
-
10 ml/2 tsp
curry powder
-
Salt and freshly ground black pepper

2 eggs
-
200 ml/7 fl oz/scant 1 cup milk
-
225 g/8 oz crab sticks, chopped
-
30 ml/2 tbsp chopped
parsley
-
50 g/2 oz/1/2 cup
cooked long-grain rice
-
Oil for shallow-frying
-
Watercress
-
Lime wedges
Method:

Sift the flour and curry powder into a bowl. Add a
little salt and pepper.

Make a well in the centre.
Add the eggs and milk and beat well until smooth.
Stir in the crab sticks, parsley and rice.

Heat
about 1 cm/1/2
in of oil in a large frying pan (skillet). Fry (sauté)
spoonfuls of the mixture until golden underneath.

Carefully turn over and brown the other side. Drain
on kitchen paper and keep hot while cooking the
remainder.

Serve the fritters hot, garnished with
the watercress and lime wedges.
