Fish and Seafood Recipes - Curried Fish Croquettes

Ingredients

  • 350 g/12 oz white fish fillet

  • 100 g/4 oz/1/2 cup mashed potato

  • 100 g/4 oz/1 cup cooked long-grain rice

  • 1 small onion, grated

  • 10 ml/2 tsp curry powder

  • 10 ml/2 tsp mango chutney

  • Salt and freshly ground black pepper

  • 1 egg, beaten

  • 25 g/1 oz/1/2 cup breadcrumbs

  • Oil for deep-frying

  • Lemon wedges


Method:

  1. Put the fish in a pan with enough water to just cover. Cook gently for 10 minutes until tender.

  2. Drain, discard the skin and any bones and flake the fish. Mix with the potato, rice, onion, curry powder, chutney and salt and pepper to taste.

  3. Shape into 8 small rolls. Coat with the egg then the breadcrumbs.

  4. Heat the oil to 190°C/375°F or until a cube of day-old bread browns in 30 seconds. Deep-fry until crisp and golden brown.

  5. Drain on kitchen paper and serve garnished with the lemon wedges.
