Fish and Seafood Recipes - English Seaside Pasta

Ingredients                                         

  • 175 g/6 oz any ribbon noodles

  • 225 g/8 oz/2 cups small whole shrimps

  • 4 spring onions (scallions), finely chopped

  • 25 g/1 oz/1/2 cup fresh breadcrumbs

  • 75 ml/5 tbsp olive oil

  • 1 handful of rocket or lamb's tongue lettuce, shredded

  • Salt and freshly ground black pepper

  • 60 ml/4 tbsp cider

  • 12 cooked peeled prawns


Method:

  1. Cook the pasta according to the packet directions. Drain. Remove the heads and tails from the shrimps.

  2. Fry (sauté) the spring onions and breadcrumbs in half the oil for 3 minutes, stirring until the bread is golden.

  3. Stir in the rocket or lettuce and cook for 1 minute. In a separate pan, fry the shrimps in the remaining oil for 2 minutes.

  4. Add the cider and prawns and cook for 1 minute. Add all the ingredients to the pasta, toss well and serve straight away.
