Ingredients

g/6 oz any ribbon noodles

g/8 oz/2 cups small whole shrimps

spring onions (scallions), finely chopped

cup fresh breadcrumbs

ml/5 tbsp olive oil

1 handful of rocket or lamb's tongue lettuce,
shredded

Salt
and freshly ground black pepper

60 ml/4 tbsp cider

cooked peeled prawns
Method:
-
Cook the pasta according to the packet directions.
Drain. Remove the heads and tails from the shrimps.

Fry (sauté) the spring onions and breadcrumbs in
half the oil for 3 minutes, stirring until the bread
is golden.

Stir in the rocket or lettuce and cook
for 1 minute. In a separate pan, fry the shrimps in
the remaining oil for 2 minutes.

Add the cider and
prawns and cook for 1 minute. Add all the
ingredients to the pasta, toss well and serve
straight away.
