Fish and Seafood Recipes - Fishy Pasta Grill

Ingredients                 

  • 225g/2 cups pasta shapes

  • 215g/1 can pilchards in tomato sauce, mashed

  • 30ml/2 tbsp olive oil

  • 30ml/2 tbsp snipped chives

  • A squeeze of lemon juice

  • 60ml/4 tbsp passata (sieved tomatoes)

  • salt and freshly ground black pepper

  • 75g/3 oz Cheddar cheese, grated

  • 2 tomatoes, sliced


Method:

  1. Cook the pasta according to the packet directions, drain and return to the saucepan.

  2. Add the remaining ingredients except the cheese and sliced tomatoes.

  3. Toss over a gentle heat until well combined and hot through. Season to taste.

  4. Add a little more passata to moisten if necessary. Turn into a flameproof dish. Cover with the cheese and garnish with the tomato slices.

  5. Grill until the cheese melts and bubbles. Serve straight away.
