Fresh Salmon and Pimiento Wheels
Ingredients

225 g/8 oz fresh
salmon fillet, skinned and cut into
thin strips

Grated
rind and juice of 1/2 lemon
-
90 ml/6 tbsp olive oil
-
8 spring onions
(scallions), chopped
-
400 g/14 oz/1large can pimientos,
drained and chopped
-
15 ml/1 tbsp chopped
basil
-
Salt and freshly
ground black pepper
-
225 g/8 oz/2 cups
whole wheat ruote
-
50 g/2 oz/1 cup breadcrumbs
-
15 g/1/2 oz/1 tbsp
butter
Method:
-
Put the salmon in a
dish with the lemon rind and juice and leave to
marinate while preparing the rest of the sauce.

Heat
60 ml/4 tbsp of the oil in a saucepan and fry
(sauté) the spring onions for about 3 minutes until
softened but not browned.

Add the pimientos and toss
in the oil for 2 minutes. Add the salmon with any
juices and cook gently for 2 minutes until just cooked - do not overcook.

Add the
basil and
remaining oil and season well with salt and pepper.
Heat through until piping hot.

Meanwhile, cook the
pasta according to the packet directions. Drain and
return to the pan. Add the hot sauce, toss well.

Meanwhile, fry the breadcrumbs in the butter until
golden. Pile the pasta on to warm plates and
sprinkle with the buttered crumbs.
