Fish and Seafood Recipes - Golden Kedgeree

Ingredients

  • 225 g/8 oz/1 cup long-grain rice

  • 5 ml/1 tsp turmeric

  • 225 g/8 oz smoked cod, haddock or whiting fillet, skinned

  • 3 hard-boiled (hard-cooked) eggs, roughly chopped

  • 45 ml/3 tbsp evaporated milk

  • Salt and freshly ground white pepper

  • Grated nutmeg Chopped parsley


Method:

  1. Cook the rice in plenty of lightly salted boiling water to which the turmeric has been added for 10 minutes or until just cooked.

  2. Drain and return to the saucepan. Meanwhile, poach the fish in water for 5-10 minutes until it flakes easily with a fork.

  3. Drain and break up discarding any bones. Stir the fish into the rice with the remaining ingredients except the parsley.

  4. Heat through, stirring gently. Serve garnished with the parsley.
