Golden Mussel Dream
Ingredients

50 g/2 oz/1/4 cup
unsalted (sweet) butter
-
3 small onions,
finely chopped
-
600 ml/2 1/2 cups double (heavy)
cream
-
15 ml/1 tbsp brandy
-
5 ml/1 tsp saffron
powder
-
150 ml/2/3 cup
strong fish stock
-
250 g/9 oz/1 small can mussels in brine, drained

Salt and freshly
ground black pepper
-
350 g/12 oz capellini
-
Snipped chives
Method:

Melt the butter in a
pan. Add the onions and fry (sauté) for 3 minutes
until slightly golden.

Add the cream, brandy,
saffron and stock and bring to the boil. Simmer over
a moderate heat until thickened and reduced by half.

Stir in the mussels and a little salt and pepper.
Meanwhile, cook the pasta according to the packet
directions.

Add to the sauce and toss gently. Pile
on to serving plates and garnish with chives.
