Fish and Seafood Recipes - Golden Mussel Dream

Ingredients                                         

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 3 small onions, finely chopped

  • 600 ml/2 1/2 cups double (heavy) cream

  • 15 ml/1 tbsp brandy

  • 5 ml/1 tsp saffron powder

  • 150 ml/2/3 cup strong fish stock

  • 250 g/9 oz/1 small can mussels in brine, drained

  • Salt and freshly ground black pepper

  • 350 g/12 oz capellini

  • Snipped chives


Method:

  1. Melt the butter in a pan. Add the onions and fry (sauté) for 3 minutes until slightly golden.

  2. Add the cream, brandy, saffron and stock and bring to the boil. Simmer over a moderate heat until thickened and reduced by half.

  3. Stir in the mussels and a little salt and pepper. Meanwhile, cook the pasta according to the packet directions.

  4. Add to the sauce and toss gently. Pile on to serving plates and garnish with chives.
