Fish and Seafood Recipes - Linguini with Crab Butter

Ingredients                                         

  • 350 g/12 oz linguini

  • 225 g/8 oz/2 cups crabmeat

  • 175 g/6 oz/3/4 cup unsalted (sweet) butter

  • 30 ml/2 tbsp lemon juice

  • 30 ml/2 tbsp snipped chives

  • Salt and freshly ground black pepper

  • Chopped flat leaf parsley

  • Lemon twists


Method:

  1. Cook the linguini according to the packet directions. Drain and return to the saucepan.

  2. Meanwhile, puree the remaining ingredients except the parsley and lemon twists in a blender or food processor.

  3. Add to the hot pasta and toss over a gentle heat until well mixed.

  4. Pile on to serving plates and garnish with the parsley and lemon twists.
