Marinated Salmon-with Fettuccine
Ingredients

225 g/8 oz salmon
tail, skinned and boned

1 large onion, finely
chopped
-
30 ml/2 tbsp chopped
parsley
-
8 basil leaves, torn
into pieces
-
120 m/1/2 cup
olive oil
-
1 lemon
-
3 red (bell) peppers,
cut into thin strips
-
6 spring onions
(scallions), chopped
-
225 g/8 oz fettuccine
-
Salt and freshly
ground black pepper
-
50 g/2 oz/1 cup
toasted fresh breadcrumbs
Method:

Cut the salmon into thin strips. Place in a dish
with the onion, parsley, basil and 90 ml/6 tbsp of
the oil.

Add the juice of half the lemon and leave
to marinate. Heat the remaining oil in a frying pan
(skillet).

Add the peppers and spring onions and fry
(sauté) for 3 minutes.

Add the salmon mixture and
continue to cook for a further 2 minutes, stirring
until the fish is just cooked.

Meanwhile, cook the
pasta according to the packet directions. Drain,
rinse with boiling water, drain again and return to
the pan.

Add the fish mixture and toss well. Season
to taste and add a little more lemon juice if liked.

Pile on to serving plates and garnish with the
breadcrumbs.
