Fish and Seafood Recipes - Pasta Da Vinci

Ingredients                                         

  • 1 onion, finely chopped

  • 30 ml/2 tbsp olive oil

  • 400 g/14 oz/1 large can chopped tomatoes

  • 45 ml/3 tbsp capers, chopped

  • 175 g/6 oz/1 cup stoned (pitted) black olives, roughly chopped

  • 2 x 50 g/2 x 2 oz/2 small cans anchovies, drained and chopped

  • 185 g/6 1/2 oz/1 small can tuna, drained

  • 2.5 ml/1/2 tsp cayenne

  • Freshly ground black pepper

  • 450 g/1lb spaghettini

  • Chopped parsley


Method:

  1. Fry (sauté) the onion in the oil for 2 minutes until softened but not browned.

  2. Add all the remaining ingredients except the pasta and parsley. Simmer uncovered for about 20 minutes until pulpy.

  3. Meanwhile, cook the spaghetti according to the packet directions. Drain, transfer to serving plates and spoon the sauce over.

  4. Sprinkle with the parsley before serving.
