Fish and Seafood Recipes - Portuguese Pappardelle

Ingredients                                         

  • 1 onion, finely chopped

  • 1 garlic clove, crushed

  • 30 ml/2 tbsp olive oil

  • 200 g/7 oz/1 small can pimientos, drained and chopped

  • 400 g/14 oz/1 large can chopped tomatoes

  • 120 g/5 oz/1 small can sardines, roughly chopped

  • 50 g/2 oz/1/2 cup pine nuts

  • 15 ml/1 tbsp chopped parsley

  • Salt and freshly ground black pepper

  • 350 g/12 oz pappardelle

  • Grated rind of 1 lemon


Method:

  1. Fry (sauté) the onion and garlic in the oil for 2 minutes, stirring.

  2. Add the pimientos and tomatoes and simmer gently for 5 minutes.

  3. Add the sardines, pine nuts and parsley and simmer for a further to minutes. Season to taste.

  4. Meanwhile, cook the pappardelle according to the packet directions. Drain and rinse with boiling water.

  5. Drain again and pile on to serving plates. Spoon the sardine sauce over and sprinkle with the lemon rind.
