Fish and Seafood Recipes - Quick Herby Tuna Pasta

Ingredients                 

  • 225 g/8 oz/2 cups rigatoni

  • 185 g/6 1/2 oz/1 small can tuna in oil

  • 30 ml/2 tbsp olive oil

  • 15 ml/1 tbsp lemon juice

  • 15 ml/1 tbsp chopped parsley

  • 15 ml/1 tbsp chopped marjoram

  • Salt and freshly ground black pepper

  • Grated Parmesan cheese


Method:

  1. Cook the rigatoni according to the packet directions. Drain and return to the saucepan.

  2. Add the contents of can of tuna (do not drain first). Add the olive oil, lemon juice, herbs, a little salt and lots of pepper.

  3. Toss over a gentle heat until well combined and hot through. Serve straight away with the Parmesan.
