Fish and Seafood Recipes - Quick Party Paella

Ingredients

  • 1 packet savoury vegetable rice

  • 450 ml/2 cups boiling water

  • 100 g/4 oz/1 cup cooked chicken, diced

  • 250 g/9 oz/1 small can mussels in brine, drained

  • 100 g/4 oz/1 cup peeled prawns (shrimp)

  • Chopped parsley


Method:

  1. Put the rice in a saucepan with the boiling water. Stir, cover and simmer for 12 minutes.

  2. Add the remaining ingredients except the parsley, cover and simmer gently for a further 8 minutes until the liquid has been absorbed and the rice is tender.

  3. Fluff up with a fork and sprinkle with the parsley before serving.
