Quick Party Paella
Ingredients

1 packet savoury
vegetable rice
-
450 ml/2 cups boiling water
-
100 g/4
oz/1 cup cooked chicken, diced
-
250 g/9 oz/1 small can
mussels in brine, drained
-
100 g/4 oz/1 cup
peeled prawns (shrimp)

Chopped parsley
Method:
-
Put the rice in a
saucepan with the boiling water. Stir, cover and
simmer for 12 minutes.
-
Add the remaining
ingredients except the parsley, cover and simmer
gently for a further 8 minutes until the liquid has
been absorbed and the rice is tender.
-
Fluff up with
a fork and sprinkle with the parsley before serving.
