Recipes - Riviera Cod and Rice
Ingredients

15 ml/1 tbsp olive oil
-
1 onion, chopped
-
2 garlic cloves,
crushed
-
1 red (bell) pepper,
sliced
-
600 ml/2 1/2 cups passata (sieved tomatoes)
-
15 ml/1 tbsp tomato
puree (paste)
-
150 ml/2/3 cup water
-
228 g/8 oz/1 cup
long-grain rice
-
Salt and freshly ground black
pepper
-
450 g/1lb cod fillet,
skinned and cubed
-
Chopped parsley
-
A few black olives
Method:
-
Heat the oil in a saucepan. Add the onion, garlic
and pepper and fry (sauté) stirring for 2 minutes.

Stir in the passata, tomato puree, water, rice and a
little salt and pepper.
-
Cover and cook gently,
stirring occasionally, for 10 minutes. Add the fish
and, if getting dry, a little more water.

Season
with salt and pepper and cook for a further 5
minutes until all the liquid has been absorbed and
the rice and fish are cooked.
-
Serve sprinkled with
parsley and olives.
