Simple Salmon Supper
Ingredients

25 g/1oz/1/4 cup
plain (all-purpose) flour
-
300 ml/1 1/4 cups
milk
-
25 g/1 oz/2 tbsp
butter
-
200 g/7 oz/1 small can
pink or red salmon
-
A few drops of anchovy
essence (extract)
-
Salt and freshly
ground black pepper
-
225 g/8 oz/2 cups
short-cut macaroni
-
100 g/4 oz
Cheddar cheese, grated

Lemon wedges
Method:
-
Whisk the flour with
the milk in a saucepan until smooth. Add the butter.
Bring to the boil and cook for 2 minutes, stirring.

Discard the skin and any bones from the fish. Stir
into the sauce with the juice. Add a few drops of
anchovy essence and salt and pepper to taste.

Meanwhile, cook the macaroni according to the packet
directions. Drain and stir into the fish sauce.

Turn
into a flameproof dish. Sprinkle the cheese over and
brown under a hot grill (broiler).

Garnish with
lemon wedges before serving.
