Fish and Seafood Recipes - Simple Salmon Supper

Ingredients                 

  • 25 g/1oz/1/4 cup plain (all-purpose) flour

  • 300 ml/1 1/4 cups milk

  • 25 g/1 oz/2 tbsp butter

  • 200 g/7 oz/1 small can pink or red salmon

  • A few drops of anchovy essence (extract)

  • Salt and freshly ground black pepper

  • 225 g/8 oz/2 cups short-cut macaroni

  • 100 g/4 oz Cheddar cheese, grated

  • Lemon wedges


Method:

  1. Whisk the flour with the milk in a saucepan until smooth. Add the butter. Bring to the boil and cook for 2 minutes, stirring.

  2. Discard the skin and any bones from the fish. Stir into the sauce with the juice. Add a few drops of anchovy essence and salt and pepper to taste.

  3. Meanwhile, cook the macaroni according to the packet directions. Drain and stir into the fish sauce.

  4. Turn into a flameproof dish. Sprinkle the cheese over and brown under a hot grill (broiler).

  5. Garnish with lemon wedges before serving.
