Ingredients

onion, chopped

g/2 oz/1/4 cup butter

g/8 oz Cheddar cheese, grated

275 g/10 oz smoked trout
fillets, skinned and diced

large tomatoes, skinned, seeded and chopped

g/8 oz/2 cups cooked long-grain rice

ml/1/2
tsp dried mixed herbs

Juice of 1 lemon

Salt
and freshly ground black pepper
Method:
-
Fry (sauté) the onion
in the butter for 2 minutes, stirring. Mix with half
the cheese and all the remaining ingredients.
-
Pack
into 4 individual ovenproof dishes and sprinkle with
the remaining cheese.
-
Bake at 200°C/400°F/gas mark 6
for about 20 minutes until bubbling and golden on
top.
