Fish and Seafood Recipes - Smokies Supper

Ingredients                 

  • 1 onion, chopped

  • 50 g/2 oz/1/4 cup butter

  • 225 g/8 oz Cheddar cheese, grated

  • 275 g/10 oz smoked trout fillets, skinned and diced

  • 4 large tomatoes, skinned, seeded and chopped

  • 225 g/8 oz/2 cups cooked long-grain rice

  • 2.5 ml/1/2 tsp dried mixed herbs

  • Juice of 1 lemon

  • Salt and freshly ground black pepper


Method:

  1. Fry (sauté) the onion in the butter for 2 minutes, stirring. Mix with half the cheese and all the remaining ingredients.

  2. Pack into 4 individual ovenproof dishes and sprinkle with the remaining cheese.

  3. Bake at 200°C/400°F/gas mark 6 for about 20 minutes until bubbling and golden on top.
