Fish and Seafood Recipes - Smoky Supper

Ingredients

  • 225g/8 oz/1 cup long-grain rice

  • 1 onion, finely chopped

  • 30ml/2 tbsp olive oil

  • 1 garlic clove, crushed

  • 200g/1 small carton low-fat soft cheese

  • Milk

  • 105g/1 small can smoked mussels

  • Lemon juice

  • salt and freshly ground black pepper

  • chopped parsley


Method:

  1. Cook the rice in plenty of boiling salted water until tender. Drain, rinse with boiling water and drain again.

  2. Meanwhile, fry the onion in the oil for 1 minute. Add the garlic and fry for a further minute.

  3. Stir in the cheese until melted and thin to a smooth sauce with milk.

  4. Add the mussels and lemon juice and seasoning to taste. Pile the rice on to serving plate.

  5. Spoon the sauce into the centre and sprinkle with the parsley.
