Smoky Supper
Ingredients

225g/8 oz/1 cup
long-grain rice
-
1 onion, finely
chopped
-
30ml/2 tbsp olive
oil
-
1 garlic clove,
crushed
-
200g/1 small
carton low-fat soft cheese
-
Milk
-
105g/1 small can
smoked mussels
-
Lemon juice
-
salt and freshly
ground black pepper
-
chopped parsley
Method:
-
Cook the rice in
plenty of boiling salted water until tender. Drain,
rinse with boiling water and drain again.

Meanwhile, fry
the onion in the oil for 1 minute. Add the garlic
and fry for a further minute.

Stir in the
cheese until melted and thin to a smooth sauce with
milk.

Add the mussels
and lemon juice and seasoning to taste. Pile the
rice on to serving plate.
-
Spoon the sauce
into the centre and sprinkle with the parsley.
