Spiced Pasta Oceana
Ingredients

g/1 oz/2 tbsp butter

onion, finely chopped

g/14 oz/1 large can chopped tomatoes

2.5 ml/1/2
tsp dried mixed herbs

1
green chili, seeded and chopped
-

g/1lb tagliatelle
-

g/8 oz/2 cups peeled prawns (shrimp)

g/4 1/2 oz/1 small jar mussels in tomato sauce

g/2 oz/1 small can anchovies, drained and chopped

Salt
and freshly ground black pepper

Chopped coriander
(cilantro)
Method:
-
Melt the butter in a large pan. Add the onion and
fry (sauté) for 3 minutes, stirring until lightly
golden.

Add the tomatoes, herbs and chili. Simmer
gently for 10 minutes until pulpy.

Meanwhile, cook
the tagliatelle according to the packet directions.
Drain.
-
Stir the prawns, mussels and anchovies into
the sauce and season to taste.
-
Pile the pasta on to
warm serving plates and spoon the sauce over.
Sprinkle with the coriander before serving.
