Fish and Seafood Recipes - Spiced Pasta Oceana

Ingredients                                         

  • 25 g/1 oz/2 tbsp butter

  • 1 onion, finely chopped

  • 400 g/14 oz/1 large can chopped tomatoes

  • 2.5 ml/1/2 tsp dried mixed herbs

  • 1 green chili, seeded and chopped

  • 450 g/1lb tagliatelle

  • 225 g/8 oz/2 cups peeled prawns (shrimp)

  • 125 g/4 1/2 oz/1 small jar mussels in tomato sauce

  • 50 g/2 oz/1 small can anchovies, drained and chopped

  • Salt and freshly ground black pepper

  • Chopped coriander (cilantro)


Method:

  1. Melt the butter in a large pan. Add the onion and fry (sauté) for 3 minutes, stirring until lightly golden.

  2. Add the tomatoes, herbs and chili. Simmer gently for 10 minutes until pulpy.

  3. Meanwhile, cook the tagliatelle according to the packet directions. Drain.

  4. Stir the prawns, mussels and anchovies into the sauce and season to taste.

  5. Pile the pasta on to warm serving plates and spoon the sauce over. Sprinkle with the coriander before serving.
