Fish and Seafood Recipes - Spinach Cod Bake

Ingredients                 

  • 175 g/6 oz/3/4 cup brown rice

  • 1 onion, finely chopped

  • 1 celery stick, chopped

  • 50 g/2 oz/1/4 cup butter

  • 450 g/1lb/2 cups frozen chopped spinach

  • Salt and freshly ground black pepper

  • A pinch of grated nutmeg

  • 4 cod fillets

  • 60 ml/4 tbsp boiling water

  • 1 fish stock cube

  • 300 ml/1 1/4 cups single (light) cream

  • 100 g/4 oz Leerdammer or Emmental (Swiss) cheese, grated


Method:

  1. Cook the rice according to the packet directions. Drain and place in a buttered ovenproof dish.

  2. Meanwhile, fry (sauté) the onion and celery in the butter for 3 minutes, stirring.

  3. Add the spinach and cook, stirring, for 4 minutes. Season to taste with the salt, pepper and nutmeg.

  4. Spoon over the rice. Top with the fish fillets. Blend the water with the crumbled stock cube and mix with the cream.

  5. Pour over and sprinkle with the cheese. Bake at 180°C/350°F/gas mark 4 for about 30 minutes until cooked through and the top is golden and bubbling.
