Tagliatelle alla Rustica
Ingredients
-
2 garlic cloves,
crushed
-
90 ml/6 tbsp olive oil
-
50 g/2 oz/1 small can
anchovies, chopped, reserving the
oil
-
5 ml/1 tsp dried
oregano
-
45 ml/3 tbsp roughly
chopped parsley
-
Salt and freshly
ground black pepper
-
225 g/8 oz tagliatelle,
preferably fresh
-
Thin slivers of fresh
Parmesan cheese
Method:
-
Fry (sauté) the garlic in the oil until golden
brown. Remove from the heat and add the anchovies in
their oil.

Return to the heat and cook gently,
stirring, until the anchovies form a paste.

Stir in
the oregano, parsley, a very little salt and lots of
black pepper.

Meanwhile, cook the tagliatelle (according to the
packet directions). Drain and return
to the pan.

Add the sauce, toss well and serve
garnished with
the Parmesan.
