Fish and Seafood Recipes - Tagliatelle Royale

Ingredients                 

  • 450 g/1lb green tagliatelle (verdi)

  • 200 ml/7 fl oz/scant 1 cup double (heavy) cream

  • 75 g/3 oz/1/3 cup cream cheese with chives

  • Grated rind and juice of 1/2 lemon

  • 5 ml/1 tsp anchovy essence (extract)

  • 5 ml/1 tsp tomato puree (paste)

  • 225 g/8 oz smoked salmon pieces, chopped

  • Freshly ground black pepper

  • 15 ml/1 tbsp chopped dill (dill weed)

  • Gherkin (cornichon) fans


Method:

  1. Cook the pasta according to the packet directions. Drain.

  2. Meanwhile, heat the cream with the cheese, stirring until smooth.

  3. Add the lemon rind and juice, anchovy essence, tomato puree, salmon, lots of black pepper and the dill.

  4. Heat gently for 3 minutes. Add the pasta, toss gently then pile on to warm serving plates and garnish each with a gherkin fan.
