Fish and Seafood Recipes - Tuna-stuffed Pittas

Ingredients

  • 100 g/4 oz/1/2 cup long-grain rice

  • 1/2 bunch of spring onions (scallions), chopped

  • 185 g/6 1/2 oz/1 small can tuna, drained

  • 90 ml/6 tbsp mayonnaise

  • 10 ml/2 tsp lemon juice

  • 5 ml/1 tsp dried mint

  • Salt and freshly ground black pepper

  • 4 sesame pitta breads


Method:

  1. Cook the rice in plenty of boiling salted water until tender.

  2. Drain and mix with the spring onions, tuna, mayonnaise, lemon juice and mint. Season to taste.

  3. Cut the pittas in half and split open gently to form pockets. Fill with the tuna mixture. Wrap each in foil and place on a baking sheet.

  4. Bake in the oven at 200°C/400°F/gas mark 6 for 10-15 minutes until piping hot. Serve straight away.
