Fish and Seafood Recipes - Tuna and Tomato Temptation

Ingredients        

  • 1 garlic clove, crushed

  • 150ml/2/3 cup chicken stock

  • 200g/1 small can copped tomatoes

  • 15ml/1 tbsp tomato puree (paste)

  • 30ml/2 tbsp snipped chives

  • 45ml/3 tbsp dry vermouth

  • 185g/1 small can tuna, drained

  • 10ml/2 tsp corn flour

  • 15ml/1 tbsp water

  • salt and freshly ground black pepper

  • 15ml/1 tbsp olive oil

  • 350g/12 oz any ribbon noodles

  • 30ml/2 tbsp single (light) cream  


Method:

  1. Place the garlic, stock, tomatoes, tomato puree, chives and vermouth in a saucepan.

  2. Bring to the boil, reduce the heat and simmer for 5 minutes or until reduced by half. Add the tuna and heat through, stirring.

  3. Blend the corn flour with the water. Add to the sauce, bring to the boil and simmer for 1 minute, stirring. Season to taste and stir in the olive oil.

  4. Meanwhile, cook the pasta according to the packet directions. Drain and toss in the cream.

  5. Add a good grinding of black pepper and pile on to warm plates.

  6. Spoon the tuna sauce on top and serve straight away.
