Fish and Seafood Recipes - Tuscan Tuna with Beans

Ingredients                 

  • 250 m/8 fl oz/1 cup olive oil

  • 100 ml/6 1/2 tbsp lemon juice

  • 2 garlic cloves, crushed

  • 2 x 425 g/2 x 15 oz/2 large cans cannellini beans, drained

  • 30 ml/2 tbsp chopped parsley

  • 185 g/6 1/2 oz/1 small can tuna, drained

  • Salt and freshly ground black pepper

  • 225 g/8 oz/2 cups short-cut macaroni

  • A few black olives Snipped chives


Method:

  1. Mix the oil, lemon juice, garlic, beans and parsley together in a saucepan. Cook for 5 minutes, stirring occasionally until hot through.

  2. Gently fold in the tuna and a little salt and pepper and heat through, taking care to keep the tuna in chunks.

  3. Meanwhile, cook the macaroni according to the packet directions, drain.

  4. Add to the sauce, toss gently and serve garnished with the black olives and chives.
