Meats Recipes - Asian Jap Chi

Ingredients

  • 4 shiitake mushrooms

  • 150 ml/2/3 cup warm water

  • 100 g/4 oz spinach

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 1 carrot, sliced

  • 1 onion, sliced

  • 100 g/4 oz beef flank, sliced very thinly and cut into strips

  • Salt and freshly ground black pepper

  • 2.5 ml/1/2 tsp monosodium glutamate (optional)

  • 100 g/4 oz/1 cup cellophane noodles

  • 15 ml/1 tbsp snipped chives

  • 1 garlic clove, crushed

  • 15 ml/1 tbsp soy sauce

  • 5 ml/1 tsp toasted sesame seeds

  • 2.5 ml/1/2 tsp sesame oil


Method:

  1. Soak the mushrooms in the warm water for 15 minutes. Drain, discard the stems and shred the caps.

  2. Wash the spinach well in several changes of water. Place in a saucepan and cook without extra water for 3 minutes. Drain and shred.

  3. Heat the oil in a wok or large frying pan (skillet). Add the carrot, onion and mushrooms and stir-fry (sauté) for 2 minutes.

  4. Add the beef and stir-fry for 3 minutes. Season with salt and pepper and the MSG, if using.

  5. Soak the noodles in boiling water for 5 minutes. Drain and add to the pan with the spinach and remaining ingredients.

  6. Toss over a gentle heat until piping hot, then serve.
