Asian Jap Chi
Ingredients

4 shiitake mushrooms
-
150 ml/2/3 cup
warm water
-
100 g/4 oz spinach
-
30 ml/2 tbsp groundnut
(peanut) oil
-
1 carrot, sliced
-
1 onion, sliced
-
100 g/4 oz beef flank,
sliced very thinly and cut into strips
-
Salt and freshly
ground black pepper
-
2.5 ml/1/2 tsp monosodium
glutamate
(optional)
-
100 g/4 oz/1 cup
cellophane noodles
-
15 ml/1 tbsp snipped chives
-
1 garlic clove,
crushed
-
15 ml/1 tbsp soy sauce
-
5 ml/1 tsp toasted
sesame seeds
-
2.5 ml/1/2 tsp sesame
oil
Method:
-
Soak the mushrooms in the warm water for 15 minutes.
Drain, discard the stems and shred the caps.
-
Wash
the spinach well in several changes of water. Place
in a saucepan and cook without extra water for 3
minutes. Drain and shred.

Heat the oil in a wok or
large frying pan (skillet). Add the carrot, onion
and mushrooms and stir-fry (sauté) for 2 minutes.

Add the beef and stir-fry for 3 minutes. Season with
salt and pepper and the MSG, if using.

Soak the
noodles in boiling water for 5 minutes. Drain and
add to the pan with the spinach and remaining
ingredients.

Toss over a gentle heat until piping
hot, then serve.
