Beef Madras with Cinnamon Rice
Ingredients

2 onions, chopped

2 garlic cloves,
crushed

75 ml/5 tbsp groundnut
(peanut) oil

30 ml/2 tbsp Madras curry powder

1.2
liters/2 pts/5 cups beef stock
-
30 ml/2 tbsp tomato puree
(paste)

30 ml/2 tbsp lemon juice
-
2 bay leaves
-
15 ml/1 tbsp light
brown sugar

750 g/1 1/2 lb lean braising steak, cut into
chunks

Salt and freshly
ground black pepper

225 g/8 oz/1 cup
basmati rice
-
5 cm/2 in piece
cinnamon stick
-
5 ml/1 tsp ground
turmeric
Method:
-
Fry (sauté) the onion and garlic in half the oil for
2 minutes. Stir in the curry powder and fry for 1
minute.

Stir in the stock, tomato puree and lemon
juice. Add the bay leaves and sugar and bring to the
boil. Reduce the heat, cover and simmer for 20
minutes.

Meanwhile, brown the meat in the remaining
oil in a separate pan. Strain the curry sauce over
the meat and season well to taste.

Bring to the
boil, reduce the heat, cover and simmer gently for 1
1/2 hours or until the meat is really tender.

Meanwhile, cook the rice by the absorption method,
adding the cinnamon, turmeric and a little salt to
the rice.

Fluff up when cooked and remove the
cinnamon stick before serving with the curry.
