Beef and Noodle Stir-fry
Ingredients

100 g/4 oz
quick-cooking Chinese egg noodles
-
225 g/8 oz fillet
steak, cut into thin strips
-
30 ml/2 tbsp oil
-
1 onion, sliced
-
1 carrot, cut into
matchsticks
-
2 celery sticks, cut
into matchsticks
-
1 red (bell) pepper, cut into matchsticks
-
50 g/2 oz mushrooms,
sliced
-
1/4 cucumber, cut into
matchsticks
-
30 ml/2 tbsp dry sherry
-
30 ml/2 tbsp soy sauce
-
15 ml/1 tbsp clear
honey
-
5 ml/1 tsp ground
ginger
-
Salt and freshly
ground black pepper
Method:
-
Cook the noodles according to the packet directions.
Drain.

Stir-fry (sauté) the steak in the oil for 2
minutes. Add the onion, carrot and celery and
continue stir-frying for a further 3 minutes.

Add
the pepper, mushrooms and cucumber and stir-fry for
2 minutes.
-
Add the noodles and the remaining
ingredients and toss well over a gentle heat until
hot through. Serve straight away.
