Meats Recipes - Beef and Noodle Stir-fry

Ingredients

  • 100 g/4 oz quick-cooking Chinese egg noodles

  • 225 g/8 oz fillet steak, cut into thin strips

  • 30 ml/2 tbsp oil

  • 1 onion, sliced

  • 1 carrot, cut into matchsticks

  • 2 celery sticks, cut into matchsticks

  • 1 red (bell) pepper, cut into matchsticks

  • 50 g/2 oz mushrooms, sliced

  • 1/4 cucumber, cut into matchsticks

  • 30 ml/2 tbsp dry sherry

  • 30 ml/2 tbsp soy sauce

  • 15 ml/1 tbsp clear honey

  • 5 ml/1 tsp ground ginger

  • Salt and freshly ground black pepper


Method:

  1. Cook the noodles according to the packet directions. Drain.

  2. Stir-fry (sauté) the steak in the oil for 2 minutes. Add the onion, carrot and celery and continue stir-frying for a further 3 minutes.

  3. Add the pepper, mushrooms and cucumber and stir-fry for 2 minutes.

  4. Add the noodles and the remaining ingredients and toss well over a gentle heat until hot through. Serve straight away.
