Big Bite Bucatini
Ingredients

60 ml/4 tbsp olive oil
-
2 garlic cloves,
crushed
-
1 onion, quartered
-
1 green (bell) pepper,
cut into chunks
-
225 g/8 oz peperoni,
cut into thick slices
-
225 g/8 oz/2 cups minced
(ground) beef
-
2 x 400 g/2 x 14
oz/2 large cans chopped tomatoes
-
2 courgettes
(zucchini), cut into thick slices
-
2 large carrots, cut
into thick slices
-
100 g/4 oz/2/3 cup stoned (pitted) black
olives
-
5 ml/1 tsp dried
oregano
-
10 ml/2 tsp caster
(superfine) sugar
-
10 ml/2 tsp tomato puree (paste)
-
Salt
and freshly ground black pepper
-
450g/1 lb bucatini
Method:
-
Heat
the oil in a large pan. Add the garlic,
onion and green pepper and fry (sauté) for 3
minutes, stirring.
-
Add the sausage and beef, broken
into chunks. Fry until the chunks are brown, but do
not break up in the usual way.

Add all the remaining
ingredients except the pasta. Simmer for 20
minutes, stirring occasionally, until thick and the
vegetables are tender.

Meanwhile, cook the bucatini
according to the packet directions. Drain. Pile on
to serving plates and serve the sauce spooned
over.
