Meats Recipes - Chinese Pork Supper

Ingredients                        

  • 250 g/9 oz/1 packet Chinese quick­cook egg noodles

  • 45 ml/3 tbsp sunflower oil

  • 225 g/8 oz pork stir-fry meat

  • 2 carrots, cut into matchsticks

  • 1 green (bell) pepper, cut into strips

  • 225 g/8 oz broccoli, cut into small florets

  • 2 celery sticks, cut into matchsticks

  • 1 bunch of spring onions (scallions) cut diagonally into 2.5 cm/1 in lengths

  • 1 garlic clove, crushed

  • 10 ml/2 tsp grated fresh root ginger

  • 100 g/4 oz/1 cup beans prouts

  • 45 ml/3 tbsp soy sauce

  • 5 ml/1 tsp light brown sugar


Method:

  1. Cook the noodles according to the packet directions, drain.

  2. Heat the oil in a large frying pan (skillet) or wok. Fry (sauté) the meat for 4 minutes, stirring.

  3. Add the carrots, pepper, broccoli, celery and spring onions and fry, stirring, for a further 4 minutes.

  4. Add the remaining ingredients and cook, stirring, for 2 minutes.

  5. Stir in the noodles and fry for a further 1 minute. Serve straight from the pan.
