Chinese Pork Supper
Ingredients

250 g/9 oz/1 packet Chinese
quickcook egg noodles
-
45 ml/3 tbsp sunflower oil
-
225 g/8 oz pork stir-fry meat
-
2 carrots, cut into matchsticks
-
1 green (bell) pepper, cut into
strips
-
225 g/8 oz
broccoli,
cut into small florets
-
2 celery sticks, cut into
matchsticks
-
1 bunch of spring onions
(scallions) cut diagonally into 2.5 cm/1 in lengths
-
1 garlic clove, crushed
-
10 ml/2 tsp grated fresh root
ginger
-
100 g/4 oz/1 cup beans prouts
-
45 ml/3 tbsp soy sauce
-
5 ml/1 tsp light brown sugar
Method:
-
Cook the noodles according to
the packet directions, drain.

Heat the oil in a large frying
pan (skillet) or wok. Fry (sauté) the meat for 4
minutes, stirring.

Add the carrots, pepper,
broccoli, celery and spring onions and fry,
stirring, for a further 4 minutes.

Add the remaining ingredients
and cook, stirring, for 2 minutes.

Stir in the noodles and fry for
a further 1 minute. Serve straight from the pan.
