Meats Recipes - Chipolata Cantata

Ingredients                        

  • 225 g/8 oz/2 cups ruote

  • 450 g/1lb chipolata sausages

  • 25 g/1 oz/2 tbsp butter

  • 2 onions, sliced

  • 1 green (bell) pepper, sliced

  • 100 g/4 oz/2 cups button mushrooms, sliced

  • 150 ml/2/3 cup soured (dairy sour) cream

  • Salt and freshly ground black pepper


Method:

  1. Cook the pasta according to the packet directions and drain.

  2. Grill (broil) or dry-fry the sausages until golden brown all over and cooked through.

  3. Meanwhile, melt the butter in a saucepan. Add the onion and fry (sauté) for 3 minutes until turning golden.

  4. Add the pepper and mushrooms and fry until golden and tender.

  5. Stir in the cooked pasta, the soured cream and a little salt and pepper. Heat through gently.

  6. Cut the sausages into bite-sized pieces and fold through the mixture just before serving.
