Conchiglie Puttanesca
Ingredients

50 ml/2 fl oz/3 1/2 tbsp olive oil

225 g/8 oz back bacon, rinded and diced

6 garlic cloves,
chopped
-
3 green chilies,
seeded and chopped
-
4 red onions, chopped
-
2 x 400 g/2 x 14
oz/2 large cans chopped tomatoes
-
5 ml/1 tsp dried
oregano
-
5 ml/1 tsp dried basil
-
5 ml/1 tsp dried thyme
-
5 ml/1 tsp caster
(superfine) sugar

Salt and freshly ground black pepper

350 gl12 ozl3 cups conchiglie
Method:

Heat the oil and fry (sauté) the bacon, garlic,
chilies and onions for
5 minutes, stirring.

Add the tomatoes, herbs, sugar
and a little salt and pepper. Simmer for 20 minutes
until thick and pulpy.
-
Meanwhile, cook the pasta
according to the packet directions. Drain. Add to
the sauce, toss well and serve straight away.
