Meats Recipes - Conchiglie Puttanesca

Ingredients                                        

  • 50 ml/2 fl oz/3 1/2 tbsp olive oil

  • 225 g/8 oz back bacon, rinded and diced

  • 6 garlic cloves, chopped

  • 3 green chilies, seeded and chopped

  • 4 red onions, chopped

  • 2 x 400 g/2 x 14 oz/2 large cans chopped tomatoes

  • 5 ml/1 tsp dried oregano

  • 5 ml/1 tsp dried basil

  • 5 ml/1 tsp dried thyme

  • 5 ml/1 tsp caster (superfine) sugar

  • Salt and freshly ground black pepper

  • 350 gl12 ozl3 cups conchiglie


Method:

  1. Heat the oil and fry (sauté) the bacon, garlic, chilies and onions for 5 minutes, stirring.

  2. Add the tomatoes, herbs, sugar and a little salt and pepper. Simmer for 20 minutes until thick and pulpy.

  3. Meanwhile, cook the pasta according to the packet directions. Drain. Add to the sauce, toss well and serve straight away.
