Recipes - Crunchy Turkey Escalopes with Lemon Noodles
Ingredients
4 turkey breasts
1
size 1 egg, beaten
85 g/1
packet parsley, thyme and lemon stuffing mix
Oil for shallow-frying
225 g/8 oz tagliatelle
Grated rind and juice
of 1 lemon
30 ml/2 tbsp chopped parsley
50 g/2 oz/1/4 cup butter
Freshly ground black
pepper
Method:
Place the turkey breasts one at a time in a plastic
bag and beat flat with a rolling pin or meat mallet.
Dip in the egg then the stuffing mix to coat
completely.
Fry (sauté) in hot oil on each side for
about 5 minutes until golden brown and cooked
through. Drain on kitchen paper and keep warm.
Meanwhile, cook the pasta according to the packet
directions. Drain and return to the saucepan.
Add
the lemon rind and juice, the parsley and the butter
cut into small flakes. Toss gently over heat until
the butter has melted.
Add a good grinding of
pepper, pile on to a serving dish and lay the escalopes on top.
