Meats Recipes - Dry Beef Curry with Spiced Rice

Ingredients

  • 30ml/2 tbsp sunflower oil

  • 2 onions, sliced

  • 1 green pepper, diced

  • 1.5ml/1/4 tsp chili powder

  • 2.5ml/1/2 tsp ground cumin

  • 2.5ml/1/2 tsp ground coriander

  • 1.5ml/1/4 tsp ground cinnamon

  • 30ml/2 tbsp garam masala

  • 450g/1 lb/4 cups minced (ground) beef

  • salt and freshly ground black pepper

  • 225g/8 oz/1 cup basmati rice

  • 25g/1 oz/2 tbsp unsalted (sweet) butter

  • chopped coriander

  • Plain yoghurt


Method:

  1. Heat the oil in a large pan. Add the onions and pepper and fry for 3 minutes, stirring.

  2. Add the chili, cumin, coriander, cinnamon and 10ml/2 tsp of the garam masala and fry for 1 minute.

  3. Stir in the beef and fry until all the grains are brown and separate. Season to taste.

  4. Cover with foil or a lid and cook very gently for 15 minutes, stirring occasionally.

  5. Meanwhile, wash the rice well, then cook in boiling salted water until tender. Drain and return to the pan.

  6. Add the remaining gram masala, the butter and the coriander and toss well.

  7. Serve with the meat spooned on top and a spoonful of yoghurt.
