Meats Recipes - Farfalle with Pork and Green Beans

Ingredients                                        

  • 350 g/12 oz/3 cups minced (ground) pork

  • 1 onion, finely chopped

  • 1 garlic clove, crushed

  • 15 ml/1 tbsp plain (all-purpose) flour

  • 250 ml/8 fl oz/1 cup pork or chicken stock

  • 120 ml/4 fl oz/1/2 cup red wine

  • 30 ml/2 tbsp tomato puree (paste)

  • 15 ml/1 tbsp chopped basil

  • 100 g/4 oz/2 cups button mushrooms, sliced

  • 225 g/8 oz green beans, cut into short lengths

  • Salt and freshly ground black pepper

  • 350 g/12 oz/3 cups farfalle

  • Grated Parmesan cheese


Method:

  1. Put the pork in a pan with the onion and garlic. Cook gently until the fat runs then fry (sauté), stirring until the meat is brown and all the grains are separate.

  2. Add the flour and cook for 1 minute. Stir in all the remaining ingredients except the pasta and cheese.

  3. Bring to the boil, stirring, reduce the heat and simmer for 20-30 minutes until the sauce is rich and thick and the beans are tender. Taste and re-season if necessary.

  4. Meanwhile, cook the pasta according to the packet directions. Drain. Add to the cooked pork and toss gently.

  5. Pile on to serving plates and sprinkle with the Parmesan cheese before serving.
