Meats Recipes - Gingered Lamb with Noodles

Ingredients                                        

  • 30 ml/2 tbsp soy sauce

  • 30 ml/2 tbsp dry sherry

  • 15 ml/1 tbsp pineapple or orange juice

  • 2 garlic cloves, crushed

  • 2 cm/1/4 in piece root ginger, grated

  • 450 g/1lb lean lamb, diced

  • 225 g/8 oz broccoli, cut into small florets

  • 30 ml/2 tbsp sunflower oil (or half sunflower and half sesame oil)

  • 225 g/8 oz cellophane noodles, soaked

  • 2.5 ml/1/2 tsp light brown sugar

  • Salt and freshly ground black pepper

  • 5 ml/1 tsp sesame seeds


Method:

  1. Mix the soy sauce with the sherry, juice, garlic and ginger. Add the lamb, toss well and leave to marinate for 3 hours.

  2. Drain, reserving the marinade. Blanch the broccoli in boiling water for 2 minutes. Drain.

  3. Heat the oil in a wok or large frying pan (skillet) and fry (sauté) the lamb, stirring for 10 minutes.

  4. Add the broccoli and cook, stirring for 2 minutes. Add the marinade and noodles, bring to the boil and cook for 4 minutes, stirring occasionally.

  5. Sprinkle with the sugar and season to taste. Scatter the sesame seeds over and serve straight from the pan.
