Gingered Lamb with Noodles
Ingredients

30 ml/2 tbsp soy sauce
-
30 ml/2 tbsp dry
sherry
-
15 ml/1 tbsp pineapple
or orange juice

2 garlic cloves,
crushed
-
2 cm/1/4 in piece root
ginger, grated
-
450 g/1lb lean lamb, diced
-
225 g/8 oz broccoli,
cut into small florets
-
30 ml/2 tbsp sunflower
oil (or half sunflower and half sesame oil)
-
225 g/8 oz cellophane
noodles, soaked
-
2.5 ml/1/2 tsp
light brown sugar
-
Salt and freshly ground black pepper
-
5 ml/1 tsp sesame seeds
Method:
-
Mix the soy sauce with
the sherry, juice, garlic and ginger. Add the lamb,
toss well and leave to marinate for 3 hours.

Drain,
reserving the marinade. Blanch the broccoli in
boiling water for 2 minutes. Drain.

Heat the oil in
a wok or large frying pan (skillet) and fry (sauté)
the lamb, stirring for 10 minutes.

Add the broccoli
and cook, stirring for 2 minutes. Add the marinade
and noodles, bring to the boil and cook for 4
minutes, stirring occasionally.

Sprinkle with the
sugar and season to taste. Scatter the sesame seeds
over and serve straight from the pan.
