Meats Recipes - Italian Sausage Rice

Ingredients                        

  • 20 g/3/4 oz/1 1/2 tbsp butter

  • 250 g/9 oz salsiccia (sweet Italian sausage), cut into chunks

  • 350 g/12 oz/1 1/2 cups arborio or other risotto rice

  • 100 g/4 oz/1 cup grated Parmesan cheese

  • Salt and freshly ground black pepper


Method:

  1. Melt the butter in a frying pan (skillet) and fry (sauté) the sausage for about 15 minutes over a gentle heat until cooked through.

  2. Meanwhile, cook the rice in plenty of boiling salted water for about 18 minutes until just tender. Drain and return to the saucepan.

  3. Stir in the sausages and the cooking juices. Add the cheese and season to taste. Toss and serve straight away.
