Meats Recipes - Knock-up Jambalaya

Ingredients                        

  • 225 g/8 oz/1 cup long-grain rice

  • 15 ml/1 tbsp dried onion flakes

  • 15 ml/1 tbsp dried green (bell) pepper flakes

  • 15 ml/1 tbsp chopped parsley

  • 2.5 ml/1/2 tsp dried snipped chives

  • 1.5 ml/1/4 tsp garlic granules

  • Salt and freshly ground black pepper

  • 250 ml/8 fl oz/1 cup passata (sieved tomatoes)

  • 450 ml/3/4 pt/2 cups chicken stock

  • 425 g/15 oz/1large can frankfurters, drained and cut into chunks


Method:

  1. Mix all the ingredients except the frank­furters in a large frying pan (skillet).

  2. Bring to the boil, reduce the heat, cover, and simmer gently for 20 minutes.

  3. Add the frank­furters and cook gently until hot through and the rice is tender and has absorbed all the liquid. Serve straight from the pan.
