Meats Recipes - Midweek Stir-fry Special

Ingredients                                        

  • 1 onion, sliced

  • 2 carrots, cut into matchsticks

  • 1 red (bell) pepper, cut into thin strips

  • 1/4 cucumber, cut into matchsticks

  • 1/4 green cabbage, shredded

  • 30 ml/2 tbsp olive oil

  • 175 g/6 oz cooked pork, cut into thin strips

  • 410 g/14 1/2 oz/1 large can bean sprouts, drained

  • 2.5 ml/1/2 tsp garlic salt

  • 30 ml/2 tbsp soy sauce

  • 15 ml/1 tbsp dry sherry

  • 5 ml/1 tsp caster (superfine) sugar

  • Salt and freshly ground black pepper

  • 2.5 ml/1/2 tsp ground ginger

  • 100 g/4 oz/1 cup peeled prawns (shrimp)

  • 2 x 85 g/2 x 3 1/2 oz/2 small packets instant chicken-flavored noodles


Method:

  1. Stir-fry (sauté) the onion, carrot, pepper, cucumber and cabbage in the olive oil for 4 minutes until softened.

  2. Add the remaining ingredients except the prawns and noodles and stir-fry for 5 minutes.

  3. Add the prawns, cover and cook for 5 minutes. Meanwhile, cook the noodles according to the packet directions.

  4. Add to the stir-fry and toss gently until well blended. Serve hot.
