Meats Recipes - Minted Apple Lamb

Ingredients                                        

  • 1 onion, thinly sliced

  • 1 cooking (tart) apple, sliced

  • 15 ml/1 tbsp oil

  • 4 lamb chump chops

  • 20 ml/4 tsp plain (all-purpose) flour

  • 300 ml/1 1/4 cups cider

  • Salt and freshly ground black pepper

  • 30 ml/2 tbsp chopped mint

  • 225 g/8 oz any ribbon noodles

  • 15 g/1 tbsp butter

  • 15ml/1 tbsp currants

  • A few sprigs of mint


Method:

  1. Fry (sauté) the onion and apple in the oil for 3-4 minutes until softened. Remove from the pan.

  2. Fry the chops for about 10­15 minutes, turning once, until just cooked through. Transfer the onion, apple and chops to a warm dish and keep warm.

  3. Blend the flour with a little of the cider. Stir in the remainder and add to the juices in the pan. Season to taste.

  4. Add half the chopped mint, bring to the boil and cook for 2 minutes, stirring. Spoon over the lamb.

  5. Meanwhile, cook the noodles according to the packet directions. Drain and toss in the butter with the remaining chopped mint and the currants.

  6. Serve with the lamb, garnished with a few mint sprigs.
