1 cooking (tart)
apple, sliced
-
15 ml/1 tbsp oil

4 lamb chump chops
-
20 ml/4 tsp plain
(all-purpose) flour
-
300 ml/1 1/4 cups cider
-
Salt and freshly
ground black pepper
-
30 ml/2 tbsp chopped

225 g/8 oz any ribbon
noodles
-
15 g/1 tbsp
butter
-
15ml/1 tbsp currants

Add half
the chopped mint, bring to the boil and cook for 2
minutes, stirring. Spoon over the lamb.
-
Meanwhile,
cook the noodles according to the packet directions.
Drain and toss in the butter with the remaining
chopped mint and the currants.
-
Serve with the lamb,
garnished with a few mint sprigs.
