Fry (sauté) the meat, onion and garlic in the olive oil, stirring, until
browned and all the grains are separate. Add the
wine, tomatoes, thyme and a little salt and pepper.
Bring to the boil, reduce the heat,
part cover and
simmer until nearly all the liquid has evaporated
and the sauce is thick. Taste and re-season if
necessary.
Meanwhile, cook the tagliatelle according
to the packet directions. Drain. Add to the cooked
meat mixture and toss well.
Turn into a flameproof
serving dish. Top with the Mozzarella and Parmesan.
Place under a hot grill (broiler) until the
Mozzarella melts and bubbles. Serve straight away.
