Meats Recipes - Mozzarella-topped Pork Ragout

Ingredients                        

  • 350 g/12 oz/3 cups minced (ground) pork

  • 1 onion, finely chopped

  • 2 garlic cloves, crushed

  • 15 ml/1 tbsp olive oil

  • 150 ml/2/3 cup white wine

  • 400 g/14 oz/1 large can chopped tomatoes

  • 2.5 m/1/2 tsp dried thyme

  • Salt and freshly ground black pepper

  • 350 g/12 oz tagliatelle

  • 60 ml/4 tbsp grated Mozzarella cheese

  • 60 ml/4 tbsp grated Parmesan cheese


Method:

  1. Fry (sauté) the meat, onion and garlic in the olive oil, stirring, until browned and all the grains are separate. Add the wine, tomatoes, thyme and a little salt and pepper.

  2. Bring to the boil, reduce the heat, part cover and simmer until nearly all the liquid has evaporated and the sauce is thick. Taste and re-season if necessary.

  3. Meanwhile, cook the tagliatelle according to the packet directions. Drain. Add to the cooked meat mixture and toss well.

  4. Turn into a flameproof serving dish. Top with the Mozzarella and Parmesan.

  5. Place under a hot grill (broiler) until the Mozzarella melts and bubbles. Serve straight away.
