Meats Recipes - Offally Good Macaroni

Ingredients                                        

  • 350 g/12 oz/3 cups elbow macaroni

  • 25 g/1 oz/2 tbsp butter

  • 1 onion, finely chopped

  • 1 leek, finely chopped

  • 4 lambs' kidneys, skinned and cored and cut into small pieces

  • 200 g/1 3/4 cups chicken livers, trimmed and roughly chopped

  • 30 ml/2 tbsp plain (all-purpose) flour

  • 250 ml/1 cup chicken stock

  • 100 g/4 oz/2 cups button mushrooms, sliced

  • 2.5 ml/1/2 tsp dried thyme

  • 120 ml/1/2 cup passata (sieved tomatoes)

  • 15 ml/1 tbsp tomato puree (paste)

  • 150 ml/2/3 cup dry white wine

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp chopped parsley


Method:

  1. Cook the macaroni according to the packet directions. Drain.

  2. Meanwhile, melt the butter in a large pan. Add the onion and leek and fry (sauté) for 2 minutes, stirring.

  3. Add the kidney and liver and fry for 2 minutes, stirring. Stir in the remaining ingredients except the parsley.

  4. Bring to the boil, stirring, reduce the heat, cover and simmer gently for 15 minutes.

  5. Stir in the macaroni, taste and re-season if necessary. Pile on to serving plates and sprinkle with the parsley.
