Offally Good Macaroni
Ingredients

350 g/12 oz/3 cups
elbow macaroni

25 g/1 oz/2 tbsp butter
-
1 onion, finely
chopped
-
1 leek, finely chopped
-
4 lambs' kidneys,
skinned and cored and cut into small
pieces
-
200 g/1 3/4 cups
chicken livers, trimmed and roughly
chopped
-
30 ml/2 tbsp plain (all-purpose)
flour
-
250 ml/1 cup chicken stock
-
100 g/4 oz/2 cups button mushrooms, sliced
-
2.5 ml/1/2 tsp dried
thyme
-
120 ml/1/2 cup
passata (sieved tomatoes)

15 ml/1 tbsp tomato
puree (paste)

150 ml/2/3 cup dry white wine
-
Salt
and freshly ground black pepper

15 ml/1 tbsp chopped
parsley
Method:
-
Cook the macaroni
according to the packet directions. Drain.

Meanwhile, melt the butter in a large pan. Add the
onion and leek and fry (sauté) for 2 minutes,
stirring.

Add the kidney and liver and fry for 2
minutes, stirring. Stir in the remaining ingredients
except the parsley.

Bring to the boil, stirring,
reduce the heat, cover and simmer gently for 15
minutes.

Stir in the macaroni, taste and re-season
if necessary. Pile on to serving plates and sprinkle
with the parsley.
