Meats Recipes - Oriental Minced Pork with Rice Noodles

Ingredients                                        

  • 24 dried shiitake mushrooms

  • Warm water

  • 60 ml/4 tbsp sunflower oil

  • 4 garlic cloves, crushed

  • 30 ml/2 tbsp grated fresh root ginger

  • 550 g/5 cups minced (ground) pork

  • 60 ml/4 tbsp sesame seeds

  • 250 ml/8 fl oz/1 cup black bean sauce

  • 60 ml/4 tbsp hot chili oil

  • 60 ml/4 tbsp rice or white wine vinegar

  • 45 ml/3 tbsp light soy sauce

  • 225 g/8 oz Chinese rice noodles

  • 4 spring onions (scallions), chopped


Method:

  1. Soak the mushrooms in the warm water for 15 minutes. Drain, discard the stems and chop the caps.

  2. Heat the oil in a large frying pan (skillet) or wok. Add the garlic, ginger, pork, mushrooms and sesame seeds and fry (sauté) until the meat is brown and all the grains are separate.

  3. Add the black bean sauce, chili oil, vinegar and soy sauce and simmer for a further 5 minutes.

  4. Cook the rice noodles according to the packet directions. Add to the meat, toss well and serve garnished with the spring onion.
