Recipes - Oriental Minced Pork with Rice Noodles
Ingredients
24 dried shiitake
mushrooms
Warm water
60 ml/4 tbsp sunflower
oil
4 garlic cloves,
crushed
30 ml/2 tbsp grated
fresh root ginger
550 g/5 cups minced (ground)
pork
60 ml/4 tbsp sesame
seeds
250 ml/8 fl oz/1 cup
black bean sauce
60 ml/4 tbsp hot chili oil
60 ml/4 tbsp rice or
white wine vinegar
45 ml/3 tbsp light soy
sauce
225 g/8 oz Chinese
rice noodles
4 spring onions
(scallions), chopped
Method:
Soak the mushrooms in
the warm water for 15 minutes. Drain, discard the
stems and chop the caps.
Heat the oil in a large
frying pan (skillet) or wok. Add the garlic, ginger,
pork, mushrooms and sesame seeds and fry (sauté)
until the meat is brown and all the grains are
separate.
Add the black bean sauce, chili oil,
vinegar and soy sauce and simmer for a further 5
minutes.
Cook the rice noodles according to the
packet directions. Add to the meat, toss well and
serve garnished with the spring onion.
